I’m in L-O-V-E with this salad and hope you find it as delicious and easy as we do! I’m not sure if it’s Valentine’s Day in the air, but love and kindness are at the heart of everything right now! This yummy salad is light, refreshing, and filling and always exceeds my expectations, no matter how many times I make it.
I typically make this salad on Sunday afternoon so that it’s ready and waiting in the fridge for the whole week. Ryan is a big fan of taking this to work for lunches, since it doesn’t get soggy and requires no heating. The veggies stay crisp and crunchy and the chicken and quinoa soak up all of the flavor. Oh and don’t be bashful. Licking the bowl clean is totally acceptable!
